Chicken Fried SteaK?

Postby sundaeman » Thu Nov 06, 2008 10:32 pm

Hey Guys,

I may have time in the AM, so if all goes according to my evil plan I may be looking for some chicken fried steak.

Denny's doesn't count.

Thanks for the suggestions, sounding like the Forest Diner or cook some up tomorrow.

For some strange reason Pollock Johnny's for lunch suddenly sounds good.

With these cravings, you should get your cholesterol checked.

Got it checked a few weeks ago... not call from the doc means I'm good. I'm usually a good little do-bee on the food front, but every once in a while you just gotta say what the %#$@.

NW corner of Washington Blvd & West Patapsco (the area where Rt1, Caton Ave, Hammonds Ferry, and W. Patapsco kinda meet up)

I think there's one at Lexington Market too.

I don't think I've ever had chicken fried steak. Does the steak taste like chicken? But seriously, is the steak prepared like fried chicken and deep fried or cooked in a frying pan?

Cube steak -- or minute steak where I grew up -- is a tough cut of beef, usually round steak, after it has been run through a really scary machine that cuts through the tough stuff at close intervals, yielding something you can chew. Don't let the "steak" part get you thinking medium rare, this is well-done territory. I don't know the measurements, I just do it: Dredge meat in flour-salt-pepper mixture, reserving the "extra" flour mixture for gravy. Fry at med-high temp in large skillet until crispy brown, using a generous amount of margarine (I use Parkay squeeze margarine). Drain meat between sheets of paper towel, blot excess before serving. Stir the "extra" flour mixture into the margarine left in the skillet. You may need to adjust either the flour or the margarine until you get the hang of it. Stir in enough water to let you scrape the chunks free ("deglaze"), add milk, and let it simmer rapidly, stirring frequently, until it looks like gravy. THIS IS WHAT IT'S ALL ABOUT, some of the best gravy you'll ever find. Mashed potatoes, a veggie, and you're all set. Make more than you think you'll want -- you're likely to surprise yourself. :)

(I put gravy on the meat after I took the picture. If you like biscuits and gravy, look in the frozen foods section for Mary B's buttermilk or southern style biscuits. I can't decide if I like one better than the other. They're a staple in our freezer.)

I remember mom cooking minute steak every week, back in Iowa. And the sides of mashed potato/gravy and beans (green or lima and always canned) were traditional. How we kids stayed skinny is a mystery. Scott

ps - Thanks for stirring up the memory :)

+1. So true. We'd bolt from the house right after breakfast and the only rule DH and I had was to be home before the street lights came on.
